Even my super picky 4 year old eats this with lots of salsa (bonus points for getting veggies in without her knowing)!! This recipe comes together fairly quickly for an easy weeknight dinner. What’s even better, is that it is just as good warmed up, so if you have time to meal prep on the weekend, this is a great recipe to use for dinner later in the week.
-Add olive oil to a large pan over medium heat. Once to pan is warm, add the onions and green peppers and saute until the onions are translucent and both are soft (approx. 10 min). Make sure to stir throughout cooking so that the onions do not burn. Once the onions and peppers are soft, take them out of the pan and set aside for later.
-Add about 2 tbsp of olive oil to the hot pan and add the thinly sliced chicken breast. Once the chicken begins to brown, add the spices and stir to incorporate. At this point, you may need to add a small amount of water if the pan is dry to help and coat the chicken with the spices.
-When the chicken is almost cooked through (approx. 7 min), add the onions and green peppers back to the pan and stir to coat the veggies with the spices. Allow to cook for a couple more minutes.
-We keep toppings pretty simple in our house, cheddar/pepperjack cheese, shredded lettuce and salsa. Feel free to get creative!!

- 1 large onion, thinly sliced
- 1 large green pepper, thinly sliced
- 1 1/2 lbs chicken breast, thinly sliced
- 1 1/2 tbsp Cumin
- 1/4 tsp Chili Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp Paprika
- 1/4 tsp Cayenne Pepper
- 1/2 tsp Salt
- 1/2 tsp Pepper
- Approx. 4 tbsp Olive Oil
- Flour Tortillas
Instructions
- Add 2 tbsp of olive oil to a large pan and place over medium heat.
- Once the pan is warm, add the thinly sliced onions and green peppers and saute until the onions become translucent and both the onions and peppers are soft.
- Once the onions and peppers are cooked, take them out of the pan and set aside for later.
- Pour 2 tbsp of olive oil to the hot pan and add the thinly sliced chicken breast. Once the chicken has begun to brown, add all of the spices and stir to coat the chicken. At this point, you may need to add some water (about 1/4 c) if your pan is dry. This will help to make sure the spices coat the chicken evenly.
- Once the chicken is almost cooked through (approx. 7-8 min), add the onions and peppers back to the pan and stir. Allow to cook for about 5 min.
- Top with your favorite toppings.
