These are amazingly simple and fast to make. Using the Instant Pot makes dinner so much easier. I can dump the carrots in and walk away without having to worry about them overcooking.
Ingredients
- 2 lbs carrots
- 1/2 c cold water
- 2 tbsp butter
- salt & pepper to taste
Instructions
- Peel carrots and cut on a bias about 1/4 inch thick.
- Add carrots, water and butter to the inner pot.
- Chose the steam function, making sure the timer is set at 2 minutes. Turn the steam valve to close.
- Once the timer goes off, release the steam valve (quick release). *Keep your hands away from the steam!!
- When the Instant Pot depressurizes and the pin drops, open the lid and pull the inner pot out. Drain the carrots to get rid of any excess water and season with salt and pepper to taste.
