Seriously, so simple! I don’t want to sound like a broken record, but I really LOVE my Instant Pot! So much that my husband bought me a second one for Christmas 🙂 These mashed potatoes could not get any easier.
-Wash and peel potatoes. (Feel free to keep the skin on……our house is not a fan of skins in the mashed potatoes) Place the potatoes in the inner pot of the Instant Pot.
-Add the water to the Instant Pot.
-Place the lid on and turn to close. Turn the valve to the sealing position.
-Using the manual setting, adjust the timer to 12 minutes. The screen on the Instant Pot will say “on” until it has come to up to pressure. Once it is up to pressure, the timer will show “12” minutes and start to count down.
-Once the timer goes off, turn the valve to release the pressure. I hold a towel when I turn the valve to shield my hand from the steam. The pin will go down when it is safe to open the lid. (DO NOT try to open the lid before the pin has gone down!!!!)
-Drain the potatoes to get rid of the excess water.
-I use my Kitchenaid mixer with the whisk attachment to create a smooth consistency.
-Pour the potatoes into the mixing bowl and add the butter, milk, cheese (optional) and seasonings. Mix until you get the desired consistency.
Ingredients
- 2 lbs red skin potatoes
- 1 1/2 c water
- 6 tbsp soft or melted butter
- 1/4 c milk
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- Optional: 1/2 c shredded cheddar cheese
Instructions
- Peel potatoes and cut into large chunks. Place into the inner pot of the Instant Pot.
- Pour water into the pot with the potatoes.
- Put the lid on and turn to close. Turn the valve to the sealing position.
- Using the manual setting, adjust the timer to 12 minutes.
- Once timer goes off, turn the valve to release the steam (being careful no to burn your hand!). It is safe to take the lid off once all of the steam has been released and the pin has dropped.
- Drain the potatoes and place into a mixing bowl.
- Add the milk, butter, seasonings and cheese to the mixing bowl and mix until desired consistency is reached.
