Breaded Chicken Bites

My kids love chicken nuggets!  Somehow the bite size nuggets taste different than the whole tenders…..Anyway, these chicken bites are great to make a big batch and freeze any that you have left over.  Pull them out of the freezer at a later time for an easy dinner, snack or lunch.

-Preheat oven to 425 degrees.

-Pour cooking oil in a deep saute pan (fill the pan to about 1 in) and turn on med heat.

-Set up the breading station.  Mix seasoning (salt, pepper and garlic powder) into the flour and place in a dish.  Mix egg and milk together and place in a separate dish.  Place breadcrumbs into another dish.

-Cut chicken breast into 1 in chunks.

-To bread the chicken, first completely coat the chicken in the flour, then move the chicken to the egg wash and cover completely.  Finally, place the chicken in the breadcrumbs, turning over to make sure all sides are covered.

-Place each piece of chicken in the hot oil, making sure not to crowd the pan.  Doing so will cause the temperature of the oil to drop.

-Allow to cook for 3-4 minutes, just until the breadcrumbs turn a golden brown.  Flip each piece over and cook for another 3-4 minutes, or until the breadcrumbs brown.

-Take the pieces out and place them on a greased baking sheet.  Continue this process until all the chicken is browned.

-Place the baking sheet in the oven and cook for 10 min or until the chicken is cooked through.
