So, I had a couple bananas that we didn’t eat fast enough, sitting on my counter and not wanting to throw them away, I figured I would make some muffins with my girls. They LOVE muffins, so it only seemed natural. This was an easy recipe that we made while dinner was cooking. My girls love helping in the kitchen, so easy recipes are so helpful, because let’s face it, having an almost 2 year old and a 4 year old helping you can be a little stressful sometimes 🙂
-Peel overripe bananas and place them in a bowl. Using a fork, mash them until they are broken down and there are not many big lumps left.
-Add the remaining ingredients and mix until everything is incorporated. Don’t overmix because the muffins will become tough.
-Place muffin cups in a muffin pan and scoop the batter into each cup filling 3/4 of the way up.
-Place in the oven and cook for 25 minutes.
Ingredients
- 3 ripe bananas
- 1 egg
- 1/3 c melted butter
- 3/4 c sugar
- 1 tsp baking powdder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 c whole wheat flour (can substitute white flour)
- 1/2 c chocolate chips
Instructions
- Preheat oven to 375 degrees.
- Peel the bananas and place in bowl. Mash the bananas until most of the lumps are gone.
- Mix in the egg and melted butter.
- Add the rest of the dry ingredients and mix until just incorporated. Do not overmix or the muffins will come out tough.
- Fill muffin cups 3/4 of the way full and place in oven for 25 minutes.
- To test if the muffins are done, push a toothpick into the middle of the muffin. If it comes out clean, it is finished cooking.
