Vegetable Alfredo

My family loves pasta.  I found this alfredo sauce recipe on http://www.100daysofrealfood.com.  I love this recipe because it is only a couple ingredients but has such a great flavor.  This is a great dish that you can throw in some new veggies for your family to try because everything tastes good in a rich and cheesy sauce.  You can add chicken or shrimp to this if you would like.  Get as creative as you like with the veggies or meats.  This dish will be a staple in our house for the next couple of weeks since we observe Lent and can’t eat meat on Fridays .

-Wash and cut mushrooms and saute in a pan with butter over medium heat.  When they are almost finished, add either roasted garlic paste or regular chopped garlic.

-While the mushrooms are sauteing, cut broccoli into bite size pieces and grate carrots.  Place both in a bowl and add some water.  Cover with plastic wrap and place in the microwave to steam them for 5 minutes.

-Once the broccoli and carrots are steamed, add to the pan with the mushrooms and mix gently so the broccoli does not break apart.

-To make the sauce, add butter and heavy cream to a sauce pan and allow to cook over low heat until the butter has melted and the cream has thickened slightly.  Add the Parmesan and mozzarella cheese, salt and pepper and mix well.

-Add the pasta and the vegetables to the pot with the sauce and toss so that everything is well coated.  Serve immediately.

-Serve with garlic bread and ENJOY!!
