So, you’ve been asked to provide a salad or side dish for the next party or pot luck lunch and are struggling with what to make. This salad is a great alternative to the played out macaroni salad or potato salad and is a definite crowd pleaser. I recently made this for my daughters birthday party, and not a drop of it was left. It can be a little time consuming to cut the broccoli and cauliflower, but is definitely worth it.
-In a bowl, mix broccoli, cauliflower, onion, bacon and cheese together.
-In a separate bowl, whisk mayonnaise, sugar and vinegar until well combined.
-Pour the dressing over the broccoli and cauliflower mix and stir until evenly coated.
**Add dressing to the salad about an hour before you plan to serve. The salad may look dry when you first incorporate the dressing but will “water” down after sitting for a little while.
