I LOVE chicken cordon bleu, but do not always have the time to make it the traditional way. That is was led me to creating this recipe. I was looking for a one pot meal that provided all the flavors of chicken cordon bleu and would fill my family up!! In a matter of about 35 minutes, I am able to put a flavorful and filling dinner on the table. This will definitely be a go to meal for our family going forward.
-Cut chicken and ham into bite size pieces.
-Select the saute method on the Instant Pot and wait until you get the “Hot” message on the screen.
-Add the olive oil. Allow to warm for a minute and then add the chicken into the pot. Add the seasonings.
-Stir the chicken around to allow all sides to brown.
-Add the ham to the chicken and stir. Add the pasta, butter and chicken stock.
-Place the lid on the Instant Pot and turn to close. Close the steam valve.
-Choosing the manual setting, adjust the timer to 4 minutes. Once the timer goes off, allow to sit for 2 min and the quick release.
-Take the lid off and add the cream cheese. Once the cream cheese is melted most of the way, add the milk and cheese. Stir until all of the cheese is melted.
-Top with toasted bread crumbs to give you the “breaded” taste. ENJOY!
Ingredients
- 1 1/2 lbs boneless, skinless chicken breast
- 8 oz ham, cubed
- 1/4 tsp pepper
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 2 tbsp butter
- 4 c chicken stock
- 16 oz pasta (I used cavatappi)
- 8 oz cream cheese
- 1 c milk
- 2 c Italian blend shredded cheese (can use whatever cheese you like)
- 1 tbsp olive oil

- Add the pasta, butter and chicken stock.
- Place the lid on the Instant Pot and turn to close. Close the steam valve.
- Choosing the manual setting, adjust the timer to 4 minutes. Once the timer goes off, allow to sit for 2 min and the quick release. (I would recommend a controlled quick release to avoid the starch from the pasta to splatter out of the valve)
- Take the lid off and add the cream cheese.
- Once the cream cheese is melted most of the way, add the milk and cheese. Stir until all of the cheese is melted.
- Add some garlic bread and a salad and you are all set for dinner!
