Lasagna Roll-ups

Love Lasagna?  Hate how messy it can be?  These lasagna roll-ups are fun and make plating so easy.  And, who doesn’t love their own individual lasagna?!?  This would be perfect for a large, family get together.   Plus, this is a great recipe to get the kids in the kitchen helping you.  My girls had a blast layering everything on and rolling up the lasagna noodle.  These are also great to make ahead of time and freeze.

-Cook lasagna noodles according to the package instructions and allow to cool.

-Saute the ground beef until cooked through. Add the minced garlic, salt and pepper and allow to cook until the garlic becomes fragrant.  Set beef aside to cool down.

-Combine ricotta, mozzarella, egg, garlic powder, salt and pepper in a bowl and set aside.

-Lay each lasagna noodle flat on the counter. I like to do at least 8 at a time.

-Once the lasagna noodle is flat, spread a layer of the ricotta cheese mixture on top.

-Sprinkle some of the ground beef on top of the ricotta layer.  Have the kiddos help!!

-Start rolling from one end of the noodle to the other.  Don’t roll too tightly or the mixture will fall out.

-Pour some spaghetti sauce into a pan, enough to cover the bottom.

-Place each roll-up in the pan and pour remaining sauce over the top.

-Cover the pan with foil and place in the oven.

-Bake for 1 hr and 15 min. Once cooked, sprinkle the remaining mozzarella cheese on top and place under the broiler until melted.
