This soup is a favorite of my husbands, so I wanted to adapt my original recipe in order to use my Instant Pot. It worked out great! So flavorful in a quarter of the time.
The great thing about this beef vegetable soup is that you can add whatever you have on hand. Leave out veggies that you don’t like and add the ones that you do like in. It’s hard to mess this up, people!
And now that I know I can make this in the Instant Pot, it’s even better! What used to take a couple hours to make and develop flavor took a total cooking time of 20 min. This is a MUST try recipe for you and your family.
Ingredients
- 1 lb stew meat
- 1 lbs carrots (diced)
- 1 medium onion (diced)
- 4 stalks celery (diced)
- 64 oz beef broth
- 1 tbsp beef base
- 1 can petite diced tomatoes
- 4 medium potatoes (diced)
- 1 can peas
- 1 can corn
- 1 can green beans
- 1/2 bag Kluski Noodles (or any noodle that you like)
Instructions
- Press Saute on the Instant Pot and wait until the screen says "Hot".
- Add a small amount of oil and then the stew meat and cook until brown on all sides.
- Add the diced carrots, diced onions and diced celery and saute for 5 minutes.
- Add the can of diced tomatoes along with the juice and the beef broth and base.
- Place the lid on and put the valve in the lock position.
- Pressure cook for 15 minutes.
- When timer goes off, release the pressure valve and take lid off.
- Add the potatoes, peas, corn, green beans and noodles and stir.
- Place the lid back on and put the valve in the lock position.
- Set timer for 5 minutes.
- Release pressure when timer goes off.
