Truth be told, I am not a huge fan of salads. If you know me well, this shouldn’t be a surprise. BUT, I have recently entered a weight loss challenge at work and I am determined to do my best. I realized that if I am going to stick to this through the 12 week challenge (and beyond), I need to start becoming creative with my meals. After all, you can only eat chicken breast with broccoli so many times before pizza starts calling your name.
First things first………find a salad dressing!! I am a ranch lover. I have been very faithful to ranch since I was a child. Unfortunately, that is not going to cut it if I want to see the lbs fall off.
My husband and I were recently enjoying a rare date night this past week and we had the BEST vinaigrette. It was light and fresh with a touch of sweet. So, the challenge started for me to try and recreate it. I must admit that the recipe I am going to share below is not the same as the one from the restaurant, but I was pleasantly surprised at how it turned out. It’s a great vinaigrette for those hot summer days when you don’t wantanything heavy. I served it on a seared chicken salad and the pair of chicken with the vinaigrette was very tasty!
Light and fresh citrus vinaigrette.
Ingredients
- 1 small shallot
- 1/4 c white wine vinegar
- 3/4 c olive oil
- 3 tbsp freshly squeezed lemon juice
- 3 tbsp freshly squeezed orange juice
- 1 1/2 tsp honey
- Salt and pepper to taste
Instructions
- Mince the shallots and place in bowl.
- Add the white wine vinegar, olive oil, freshly squeezed lemon and orange juice and honey and whisk until all ingredients are incorporated.
- Add salt and pepper to taste.
- *You can adjust the honey if you would like it sweeter.
This looks good and simple!!
