Ready to WOW your guests? Maybe you were asked to bring something to a potluck…….These mini cheesecakes are the perfect addition to any meal. They are small enough to not feel TOO guilty for eating them, but pack enough goodness to feel like you had just enough for dessert.
If you are cooking for a crowd, these are perfect because they are already portioned out for you.
These are also very versitale. It so easy to make different flavor cheesecake from one recipe. In the picture below, I made cherry cheesecake and caramel chocolate drizzle cheesecake. So, this allows you to accommodate everyone.
Try these for yourself. You will not be disappointed!!
Ingredients
- 1 c crushed graham crackers
- 2 tbsp sugar
- 3 tbsp melted butter
- 16 oz soften cream cheese
- 1/2 c sugar
- 2 eggs
- 1/2 tsp vanilla
Instructions
- Preheat the oven to 350 degrees.
- Bring the cream cheese to room temperature and melt the butter.
- Place the crushed graham crackers and sugar in a bowl and pour the melted butter. Mix to incorporate well.
- Place mini cupcake liners in the cupcake pan and pour about 1-2 tsp of the graham crackers into each liner. Using the back of a measuring spoon, pat the graham crackers down to form the crust.
- To make the filling, place the cream cheese in a bowl and slowly pour the sugar in while mixing.
- Once the sugar is incorporated, add the eggs, one at a time, and mix well after each.
- Add the vanilla at the end.
- Pour the filling into the cupcake liners filling it 3/4 of the way up.
- Place in the oven and bake for 17 minutes. To test if they are done, you can put a toothpick in the middle of one of the cheesecakes. If it comes out clean, they are done.
- Once completely cooled, you can top with the desired toppings.
- I used cherry pie topping for half.
- For the other half, I melted caramel and chocolate and drizzled both on top. Then I sprinkled mini chocolate chips on top.
